SOURDOUGH vs WHOLE-GRAIN

WHOLE GRAIN tortillas naturally contain calcium, iron, and zinc. However, whole-grain tortillas also contain phytic acid, a chemical compound which blocks the absorption of these essential minerals.

PAZ SOURDOUGH Through the fermentation process, phytic acid is broken down, leading to an increase in nutrients. This, in turn, enables the body to absorb more of these essential minerals.

WHITE FLOUR or ENRICHED tortillas are made with a denatured milled flour, where parts of the wheat kernel are removed to prolong shelf life. This process not only deprives humans of significant nutrients. but hold far less nutritional value compared to those made from whole wheat.
